This roasted corn pasta salad is extremely easy to make. It’s versatile. You can serve it as a main course, a side, or as a healthy packed lunch.
It would also be an ideal BBQ or picnic addition. Proving extremely popular at your next summer gathering.
As a sweetcorn and pasta salad it has a perfect blend of smoky, sweet, and tangy flavours in every bite.
My healthier version of this classic American recipe was inspired by a similar dish I enjoyed whilst on a trip there recently, with a few twists.
This salad combines tasty charred corn with tender pasta, crunchy onion and a delicious low fat salad dressing.
Plus there’s no fiddling about with pulling ears off corn cobs here either, as I’m using frozen sweetcorn for my easy corn pasta salad!
This pasta salad delivers all the rich, satisfying flavour you would expect from a creamy pasta salad, without the use of actual cream.
Therefore this recipe means you can enjoy a delicious tasting dish without having to worry about unnecessary calories.

- Macaroni
- Frozen sweetcorn, defrosted and dried
- Olive Oil
- Small red onion
- Freshly chopped coriander
- Low fat grated cheddar cheese
- 0% fat Greek yogurt
- Low fat mayonnaise
- Dijon mustard
- Red wine vinegar
- Freshly Ground Salt and Black Pepper

Step By Step Instructions
Detailed instructions are in the recipe card below. But here is a quick step by step guide of how to make this roasted corn pasta salad recipe:
Step 1
- Pre-heat oven to 200C Fan.
- Cook the pasta as per packet instructions, drain, rinse under cold water and set aside to cool.
Step 2
- Whilst pasta is cooking, mix sweetcorn with olive oil and season with salt and pepper.
Step 3
- Spread the sweetcorn on a lightly greased baking tray.
- Cook in oven for 8 minutes, then stir and cook for about a further 8 minutes.
Step 4
- When corn is slightly browned remove from oven and allow to cool.
Step 5
- Combine the cooled pasta, roasted corn, onion, coriander and grated cheese in a medium sized mixing / salad bowl.
Step 6
- In a small Pyrex bowl combine the yogurt, mayonnaise, mustard, and vinegar. Season to taste with the salt and pepper.
Step 7
- Combine the amount of salad dressing you require to make creamy enough with the roasted corn pasta salad.
- Season to taste and serve.
Substitutions
- Macaroni – you can use other small short pasta shapes.
- Frozen sweetcorn, defrosted and dried – you could use fresh corn cobs, grilled and kernels removed.
- Olive Oil
- Small red onion – you could use any onion you wanted.
- Freshly chopped coriander – you could use freshly chopped parsley instead.
- Low fat grated cheddar cheese – you could use full fat.
- 0% fat Greek yogurt – you could use full fat or plain yogurt instead.
- Low fat mayonnaise – you could use full fat instead.
- Dijon mustard – Dijon is best to give the low fat dressing a slight kick. You can experiment with other mustards if you like. I would not recommend wholegrain though.
- Red wine vinegar – you could use white wine vinegar although I prefer red wine as it is less sharp.
- Freshly Group Salt and Black Pepper

Ingredients
Corn Pasta Salad
- 200 g Macaroni
