Hi pals! It’s been so warm and sunny lately in Denver and I’m LIVIN’ for it. I cannot believe I turn 35 next month and my sweet Charlie baby turns 2 in June. Where does the time go?!

Onto the good eats!
I made the most delish air-fried tofu for quick lunches. I pressed and cubed it then tossed it in a bowl with Korean BBQ sauce, 1 tbsp cornstarch and drizzle of olive oil. Let it marinate for an hour. Then air-fry (I own this air-fryer and I’m in love) till crispy!


I loved it with roasted-from-frozen broccoli (cook at 400F for 20 min with just salt, then add oil and cook 10 more min), romaine with carrots and ranch, and green onions.
Pre-pilates frozen whole grain waffle with TJ’s cherry skyr yogurt and almond butter…


And post-pilates egg fold with feta inside, TJ’s zhoug, avocado and micro greens.


OMG these new skillet chicken parm meatballs…insane!! New go-to family dinner for sure. Served with Brami curly mac and extra Rao’s.


Gorgeous healthy strawberry muffins with best strawberry lemon glaze! Breakfast heaven.


Good Culture cottage cheese with juicy blackberries and tahini is another fave post-workout snack.


Higher protein matcha chia pudding for a no-cook breakfast that makes mornings a smidge easier.


30-minute baked cod with tomatoes and pesto orzo for an easy, flavor bomb dinner. Kids were all about the orzo LOL.


The best skillet chicken fajitas (that I actually tested on a sheet pan this time but prefer the skillet sear for more flavor).


My first time making burger bowls! I was inspired by one I saw on IG served over roasted sweet potatoes and they were a big hit.
I made an epic cashew “special sauce” with ½ cup each cashews and water, 2 tbsp mustard, 3 tbsp ketchup, 1 tbsp ACV, ½ tsp onion and garlic powder, and ¾ tsp salt. Should I post this recipe? How do we feel about beef?


This grilled chicken shawarma is sooo delish! We made a double batch and served it with a quick salad with TJ’s cruciferous blend, instant pot rice, and my fave 5-min yogurt tahini sauce.
I also tried grilling TJ’s pre-marinated chicken shawarma thighs for an easy meal and they didn’t disappoint. I way prefer breast to thigh, though.


I love making my honey mustard chicken, cauliflower and sweet potato casserole on sunday for a comforting + nourishing meal.


I tried this sheet pan chicken and cauliflower and we really liked it! I added carrots and used chicken breast (cooked for much longer). I served it with a mint yogurt sauce (Greek yogurt, lemon, garlic, olive oil, dried mint) and air-fried potatoes.


Eight million batches of the best healthy brownies ever, forever. It makes me smile so big knowing how many of you love these!


Stuff I’m Loving Lately
- Now that it’s warmer, I’ve been throwing this freezable snack bag now in the diaper bag with yogurt pouches, fruit, cheese, etc. I like that it’s smaller than the lunch box version I have for both boys.
- Mind Your Body–the life-changing book (along with her podcast, The Cure for Chronic Pain) that I tell everyone I know and love they must read. I have Nichole to thank for getting rid of my disc related back pain and my dad’s sciatica. It’s also the reason my friend can eat broccoli without taking Beano for the first time in 10 years. It’s why husband no longer has to take Nexium for his [stress-induced] stomach pain after taking it for decades. I know myself and how I actually feel in a way I never knew possible. I thought it would end when my back pain and migraines went away but oh no, it’s so much more. Have I convinced you yet? 😉
- This cc cream (I have 05 Medium) is the reason my skin looks the way it does in that first photo. t has a beautiful natural sheen and provides amazing natural looking coverage plus SPF.
- Forever my favorite mineral SFP + sightly glowy morning moisturizer!
- Really loving the fun flavors of Mezcla protein bars (pistachio chocolate yesss) for a good on-the-go plant based option.
- I got both boys one of these full coverage sun hats to wear to camp, parks, swimming etc this summer and we love them. You can adjust the back and the chin strap, plus it covers their neck. A must for the Denver sun! I actually got size L and it fits them both totally fine.
- Three adorable, chic tops that I own and love from Target (all 25% off!): this ribbed button down vest, this sleeveless tie-front bow sweater, and this button front sweater vest.
- Jeff and I have black packing cubes we use for all travel and I wanted a colorful set for the boys. I got these and it makes packing so much more organized.
