If you’re looking for an easy healthy ramen noodles recipe that’s made totally from scratch, then look no further.
It really is very easy to make your own homemade ramen noodles.
This recipe is made from fresh, wholesome ingredients which come together to create a meal that’s so satisfying and nutritious.
Plus you’re going to love the fact that everything is made all in the same pot, saving on washing up!
You can pretty much use any leftover vegetables you have in the fridge to make this easy ramen noodles recipe.
I used leftover carrot, spinach and spring onions. Broccoli would work too.
I’d also recommend using shiitake mushrooms as an ingredient though if you can get them, just to add a little bit of authentic Asian flavour and texture!
The earthy taste of these mushrooms pairs so well with the light, savoury home made broth and complements whatever other vegetables you choose to add!


These easy healthy ramen noodles are so much healthier than the packets of dried instant ramen noodles we all remember from our college days.
To flavour the broth I used light soy sauce so it’s lower in salt. Make sure you use a similar low-sodium soy sauce by checking the bottles label.
Along with the crushed garlic, freshly grated ginger and a little sesame oil, all these flavours help to make that delicious traditional Japanese ramen deep flavour.
I used medium egg noodles. I did also try a version with wholewheat noodles that worked too.
Or just use a packet of dried ramen noodles. You won’t need the sauce though, unless you particularly want to add that!
My easy healthy ramen noodles are vegetarian but feel free to add chicken or pork if you’re not bothered about it being vegetarian.
On serving I topped my healthy ramen bowls with a soft-boiled egg and chopped spring onions to give it that classic look.
If you want to spice it up a little then you could easily sprinkle over a few chilli flakes.
This is a great budget recipe. It’s perfect for a quick lunch or busy weeknight dinner. I’m sure you’ll soon be adding it to your list of weekly staples!

- Stock/Broth – I use vegetable, you can use chicken too.
- Light Soy Sauce – use a low sodium one.
- Noodles – use dried medium egg or dried ramen noodles.
- Baby Spinach – tender leaves that are of a milder flavour compared to regular spinach. You could use kale instead.
- Sesame Oil
- Spring Onions/Scallions – for decoration
- Freshly Ground Salt and Black Pepper
- 4 eggs – for adding a soft boiled egg (if required)

Step By Step Instructions
Detailed instructions are in the recipe card below. But here is a quick step by step guide of how to make ramen noodles:


Step 1
- Gently heat the oil in a large casserole pot.


Step 2
- Sauté grated carrots and sliced mushrooms until softened. Then stir in the garlic and ginger.


Step 3
- Add stock and soy sauce. Bring to the boil and turn down to simmer.


Step 4
- Stir in noodles and cook until softened.


Step 5
- Add spinach and sesame oil and cook until spinach has wilted.


Step 6
- Divide the soup into two bowls and top with the sliced spring onions and halved soft-boiled eggs.

Ingredients
- 1 tablespoon olive oil
- 100 g grated carrots
- 230 g thinly sliced shiitake mushrooms
- 2 cloves garlic crushed
- 1 teaspoon fresh ginger grated
- 1.5 L chicken or vegetable stock
- 6 tablespoon light soy sauce
- 150 g dried medium egg or dried ramen noodles
