It wouldn’t be Christmas without a tonne of leftovers. Frankly, if you’re going to the trouble of cooking a full turkey dinner then you might aswell make as much as you can and have lots of leftovers.
Personally I love a turkey and ham toastie with some brie and chutney but if you’re looking for a recipe idea to use up all the leftovers and feed everyone for dinner then you need to try my Christmas Leftovers Pie.
Leftovers Pie Ingredients
The filling for the pie is literally whatever you have leftover. A mix of meat, potatoes and vegetables works really well. I used:
- Turkey
- Ham
- Stuffing
- Roast Potatoes
- Vegetables – carrots, parsnips and brussel sprouts
- Gravy – either leftover gravy or make another fresh jug
Then you will need a roll of puff pastry and an egg to top it.
How To Make Leftovers Pie
This recipe is honestly so easy. You don’t even need to heat up the leftovers. Just chuck them all in a dish, top with pastry and a beaten egg and bake in the oven.
- Step 1: Add the turkey, ham and stuffing to a dish. Cut or break the meat up into large bite sized pieces.
- Step 2: Add the potatoes and vegetables, again in large bite sized pieces.
- Step 3: Cover with gravy.
- Step 4: Then add a roll of puff pastry.
My roll of puff pastry was slightly larger than the pie dish so I used the off cuts to make some pastry stars for the top – totally optional of course!
Then brush on a beaten egg on top and pop in the oven for 35-40 minutes.
The pastry will so browned and crispy on top, ready to serve up for another delicious family meal in the days following Christmas.
Substitutions
- Meat – you can use any kind of leftover meat from Christmas, it doesn’t have to be turkey or ham.
- Veggie – leave the meat out and make this vegetarian friendly. Just add some more vegetables and use a vegetarian stuffing.
- Potatoes – the potoates will go soft in this pie so if you prefer you can leave these out and just heat the roasties up again in the oven or microwave and serve alongside.
- Gravy – you can either use leftover gravy or make up a fresh jug. If you are using leftover gravy you might want to add a splash of boiling water to it, as it can get quite thick when its been in the fridge.
- Egg – instead of egg you can use a little milk to brush the top of the pastry.

Ingredients
- Turkey

- 800–900ml gravy (can be leftover gravy or freshly made)
- 1 roll puff pastry
- 1 egg
Instructions
- Preheat the oven to 180c fan.
- Add the turkey, ham and stuffing to an oven dish, cut or broken up into large bite sized pieces.
- Add the roast potatoes, again in bite sized pieces, along with the vegetables.
- Pour on the gravy and mix well with a spoon.
- Unroll the pastry onto the top of the dish and cut off any excess that’s hanging over the edge.
- Use a fork to crimp the sides of the pastry to the dish then pierce the top of the pastry a few times with the fork to create some air holes.
- Beat the egg in a small bowl and brush it over the top of the pastry.
- Bake in the oven for 35-40 minutes until the pastry in crisp and golden brown.
- Serve immediately.
