Ingredient List (with Substitutions & Notes)
- Cauliflower – A large head, cut into bite-sized florets. I love buying pre-cut cauliflower for ease.
- Flour – All-purpose flour gives the batter its structure. For a gluten-free option, use a 1:1 gluten-free flour blend.
- Spices – for maximum flavor!
- Beer – I used Deschutes Non-Alcoholic Kernza® Golden Brew, but any non-alcoholic beer works. You can also use sparkling water, tonic water, or really anything with carbonation and mild flavor for a non-beer option.
- BBQ Sauce – For tossing! Use your favorite brand or try buffalo sauce for a spicy kick!


STEP 1️⃣ Mix the dry ingredients, then stir in the beer to create the batter.


STEP 2️⃣ Toss the cauliflower in the batter, ensuring it’s FULLY covered in the batter!


STEP 3️⃣-4️⃣ Bake at 425°F for 25 minutes OR fry in hot oil until golden. And then toss in BBQ sauce and enjoy immediately!

- Don’t overmix the batter – A few lumps are fine, and overmixing can make the batter dense.
- Work in batches if frying – Avoid overcrowding the pan to keep the cauliflower crispy.

In a large bowl, whisk together the flour, smoked paprika, garlic powder, baking powder, and salt. Pour in the beer and mix until just combined—don’t overmix, a few lumps are totally fine!

Toss in the cauliflower, making sure every piece is fully coated in that delicious batter.

To Bake: Preheat your oven to 425°F and line a baking sheet with parchment paper. Spread out the battered cauliflower and bake for 25 minutes, flipping halfway through for even crispiness.
