Baby Bok Choy Stir Fry is a delicious and nutritious dish that’s both simple to prepare and packed with health benefits. Baby bok choy is rich in vitamins A, C, and K, as well as minerals like calcium and potassium, making it an excellent choice for boosting immunity, bone health, and overall well-being. Its low calorie and high fiber content also make it ideal for maintaining a healthy diet.

  • Bok Choy. I am using baby bok choy in this recipe. Regular bok choy can be used as well. You can learn the difference between the two, as well as how to cut them, here: How to cut bok choy
  • Avocado oil. Or any neutral-flavored oil.
  • Ginger.
  • Garlic.
  • Red Pepper Flakes.
  • Soy Sauce.
  • Sesame Seeds. To garnish.

1. Rinse and cut the baby bok choy in half. Set aside.

2. To a large skillet or a wok, add the avocado oil and heat it on medium-high heat. Once hot, place the bok choy cut side down. Cover with a lid and cook for a few minutes, just until brown marks appear.

3. At this point, reduce the heat to medium and add the ginger, garlic, red pepper flakes, and soy sauce. Stir and cook for 4-5 minutes until the bok choy reaches the desired doneness. You may need to add a few tablespoons of water if the bok choy appears dry, or if you want it to be a little softer.

4. Transfer the bok choy to the serving plate and garnish with sesame seeds.

  • Choose fresh baby bok choy. Look for bright green leaves and firm, white stalks. Avoid any that are wilted or have blemishes.
  • Wash well. Thoroughly rinse the bok choy under cold water to remove any dirt or grit, especially at the base of the stems. You can also separate the leaves for easier cleaning.
  • Cut evenly. Cut the bok choy into uniform pieces. Halve or quarter small bok choy heads lengthwise. For larger heads, separate the leaves and slice the stalks diagonally.
  • Preheat your pan. Use a wok or a large skillet and preheat it until very hot. This ensures that the bok choy cooks quickly, retaining its crispness.
  • Adjust the seasonings. You can use a bit more soy sauce if you prefer things on the saltier side. Alternatively, you can sprinkle some salt at the end. For added depth, you can include oyster sauce or a bit of hoisin sauce. 
  • Add sesame oil. Adding sesame oil adds a nice depth of flavor, so you can add about a teaspoon in Step #3 if you have some sesame oil on hand.
  • Add rice vinegar. Adding a teaspoon of rice vinegar at the end of cooking time is also a good idea. 

This Bok Choy Stir Fry is best when stored in the refrigerator in an airtight container. It’ll stay fresh for up to 3 days. Reheat on the stovetop.
