Easy & Healthy Buffalo Turkey Burgers

Finding a way to enjoy ground turkey was one of the biggest things to help me lose weight. Truthfully, losing weight isn’t a priority for me these days, but these buffalo turkey burgers are still in rotation. My turkey burgers aren’t like when people pretend to enjoy low fat ice cream through sheer willpower. My turkey burgers, especially my easy & healthy buffalo turkey burgers, are juicy, full of flavor, and something your whole family will enjoy.

I’m team blue cheese when it comes to buffalo chicken, and these buffalo turkey burgers hit the spot. Chunks of real blue cheese dot each burger, and they’re bursting with flavor. If you are not a blue cheese fan, I do have notes to swap it out. These are more mild than spicy, but I have recommendations for heat seekers too.

Cooking Turkey Burgers on the Stove

I love these on the grill, but I pan fry them in the colder months. Personally, I think grill pans are a waste of money and storage space (plus a pain to clean). The best approach for cooking these is using a cast iron pan or a non stick stainless steel. You can find the ones I like here.

Now if you are reading this, there is a chance you are looking for a healthy recipe. You will still want to use cooking spray, oil, or even *gasp* butter. Cast iron, if it is cared for, will be mostly non stick. I actually prefer to spray my turkey burgers with cooking spray directly before putting them in the pan. It gets an even coat.

I do not recommend using a nonstick pan for most cooking because you won’t get a good crust. If that’s all you have, it’s not that big of a deal. The cast iron I recommend in the link below is less than $20 at the time of me writing it. One cast iron is totally worth the investment in my opinion.

Cooking Turkey Burgers in the Oven

Technically, yes you can cook these in the oven. It is not my favorite method, it is doable. You can cook them on a sheet pan and bake at 400F for about 20 minutes. If you are cooking these in the oven, they won’t have the same crust or crunch from pan frying, but it is easier and still delicious. I just really like the crust of a grilled burger.

If you are entertaining, you can even make these into turkey meatballs. Roll into about 20 even meatballs and bake at 400F for about 20 minutes. This is great for things like Super Bowl parties and I coat the meatballs with a little extra sauce and serve with toothpicks and homemade ranch or homemade blue cheese dressing.

Buffalo Turkey Burger with no blue cheese

If you are not a fan of blue cheese dressing, you can swap it out. It’s okay to have wrong opinions sometimes (just kidding). Blue cheese isn’t for everyone, but this is both adding fat and flavor to this burger. Swap the blue cheese for shredded mozzarella for the fat and juiciness. You will need to add 1-2 tbsp of your favorite seasoning blend to make up for the strong blue cheese flavor.

You don’t need to reinvent the wheel. Kinder’s Buttery Poultry Blend, Trader Joe’s 21 Seasoning Salute, my Easy Chicken Seasoning are all great options for seasoning. If there is no salt in your seasoning blend, make sure you add about 1 tbsp of kosher salt. Blue cheese is salty which is why there’s only a small pinch of salt in the recipe.

If you want to spice up your grilling this weekend, make sure you add these buffalo blue turkey burgers to the menu. Chunks of real blue cheese dot each burger, and they’re bursting with flavor. These are more mild than spicy, so I like to pour on extra hot sauce and top with even more blue cheese for a restaurant quality burger.

Ingredients

  • 1 lb. lean ground turkey or chicken
  • 1 oz. crumbled blue cheese
  • 1/4 cup buffalo sauce (I use Frank’s)
  • 1/3 cup panko bread crumbs
  • 1 egg white
  • 2 scallions thinly sliced
  • 1 tsp salt
  • a few dashes of Worcestershire sauce

Instructions

  1. Combine ingredients in a bowl.
  2. Divide into 6 patties (they puff up, so don’t worry if they seem small). Wet hands make this easier.
  3. Grill or pan fry for about 7 minutes or until the burgers reach an internal temperature of 165°.
