Ingredients
- -1 pound boneless, skinless chicken breasts, cut into small pieces
- – 1 tablespoon olive oil
- – 1 onion, diced
- – 4 cloves garlic, minced
- – 1 can (7 ounces) diced green chilies
- – 1 teaspoon ground cumin
- – 1 teaspoon dried oregano
- – 1/4 teaspoon cayenne pepper
- – 4 cups chicken broth
- – 2 cans (15 ounces each) white beans, drained and rinsed
- – 1/2 cup sour cream
- – Salt and pepper to taste
- – Fresh cilantro, chopped (optional)
Instructions
- 1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken and cook until browned, about 5-7 minutes.
- 2. Add onion and garlic. Cook until vegetables are tender, about 5-7 minutes.
- 3. Add diced green chilies, cumin, oregano and cayenne pepper. Stir until fragrant, about 1 minute.
- 4. Add chicken broth and white beans. Season with salt and pepper to taste. Bring to a boil, then reduce heat and simmer for 20-30 minutes, stirring occasionally.
- 5. Remove from heat and stir in sour cream.
- 6. Serve hot with fresh cilantro, if desired.
