Ingredients
- Prime rib
- 1 tbsp fresh rosemary
- 1 tbsp fresh thyme
- 3 cloves of garlic
- 2 tbsp olive oil
Instructions
- The night before, you plan to roast your prime rib, chop fresh rosemary, thyme, and garlic, and mix them with olive oil. Rub all over prime rib. Wrap it in butcher paper and place it back in the refrigerator.
- Place on the counter two hours before roasting to bring to room temp.
- Make sure the oven rack is in the center of the oven. 30 minutes before you start roasting, salt and pepper, prime rib generously, and place in the roasting pan, fat side on top. Heat oven to 500 F 30 minutes before as well.
- Multiply the Pounds of weight by 5. That’s your total roasting time in minutes. For example, a 4-pound roast, 4 × 5 = 20 minutes. An 8-pound roast? 8 × 5 = 40 minutes. Remember that number.
- Roast them for your calculated time. When the time’s up, turn off the oven. Do not open the oven door for the next 2 hours. If you open it, the prime rib will not cook properly.
- Once 2 hours have passed, remove carve and serve right away.
